Ingredients:
Heavy-duty aluminum foil
4 (18x12 sheets)
Extra lean ground beef
1 pound
Medium onion
1
Medium potatoes pealed and cut
length ways

Pace Picante sauce, (divided)
½ cup
Pickled jalapeños (chopped up)
¼ cup
Finely crushed tortilla chips
½ cup
shredded Cheddar cheese
(optional)
1 cup
McCormick Original Taco Seasoning
(divided)
1 package
Instructions:
Preheat oven to 450° F. Spray foil with nonstick
cooking spray. Combine ¼ cup Pace Picante sauce, tortilla
chips, chopped onion, and ½ package McCormick Original Taco
Seasoning; add ground beef
Shape mixture into four meat loaves. Place each one on
a sheet of aluminum foil. Toss in the potatoes with the
rest of the package of taco seasoning and chopped jalapeños.
Pour the remaining ¼ cup of Picante sauce on the meatloaf.
Bring up foil sides. Double fold top and ends to seal
the packet; leave room for heat to circulate inside.
Repeat to make four packets.
Bake 30 to 35 minutes on a cookie sheet in oven or;
Grill for 18 to 22 minutes or:
Throw the packets in a campfire full of good coals for
12 to 18 minutes.
When serving sprinkle cheese on top.
Notes:

If you live where you can’t get McCormick Original Taco
Seasoning, where do you live? You can substitute by
making your own.
1 tbl chili powder
1 tsp garlic salt
½ tsp ground cumin
Don’t add salt. These ingredients have enough by
themselves.
